Vegan Bangers and Mash

A pretty simple dish, the only complicated part being the vegan gravy. I use Beyond Meat vegan sausages, fried or grilled. The mashed potato is easy enough - I add soy milk so it's not dry, a healthy amount of dried parsley, and salt and pepper to taste.

Ingredients

  • 1 tbsp oil
  • Large onion
  • 1 tsp sugar
  • 45ml Red Wine
  • Thyme
  • Marmite
  • Mustard
  • Salt and pepper
  • Vegetable stock cube
  • 1 tsp Balsamic Vinegar
  • 25g Cornstarch

Recipe

  1. Heat oil, sugar and onion on high for 3 minutes then reduce to medium and cook a further 10 minutes until the onion is caramelized.

  2. Add the wine, thyme, pepper, mustard, stock cube, balsamic vinegar and 300ml of water.
  3. Mix in a tiny smidgen of Marmite (no more than ΒΌ of a teaspoon) and blast for another 4 minutes on high.

  4. Mix the cornstarch with a little water and mix in.

  5. Cook for another 3-4 minutes until thickened. Add salt to taste, and serve with bangers and mash, obviously.
